White Cheddar and Spinach Chicken Burgers

1 lb (450g) ground chicken

1 cup fresh spinach, chopped

1 cup white cheddar cheese, shredded

1/2 cup breadcrumbs (preferably panko)

1/4 cup green onion, finely chopped

2 cloves garlic, minced

1 tsp Dijon mustard

1/2 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil (for cooking)

4 whole wheat burger buns

Lettuce, tomato, and additional cheddar for serving (optional)

Instructions
 

In a large mixing bowl, combine ground chicken, chopped spinach, shredded white cheddar, breadcrumbs, green onion, minced garlic, Dijon mustard, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.

    Divide the mixture into four equal portions and shape each portion into a patty, about 1/2 inch thick. Make a slight indentation in the center of each patty to prevent puffing while cooking.

      Heat olive oil in a large skillet over medium heat. Once hot, carefully place the patties in the pan, ensuring not to overcrowd. Cook for about 6-7 minutes on one side until golden brown.

        Flip the patties and cook for another 6-7 minutes or until the internal temperature reaches 165°F (75°C) and the patties are cooked through.

          If desired, add an extra slice of cheddar on top during the last minute of cooking to melt.

            Toast the whole wheat burger buns in the same skillet for about 1 minute until golden brown.

              Assemble the burgers by placing a patty on each bun, topped with lettuce, tomato, and any additional cheese if you desire. Serve immediately with your favorite side.
