White Cheddar and Spinach Chicken Burgers

Ingredients
  

1 lb ground chicken

1 cup fresh spinach, finely chopped

1/2 cup white cheddar cheese, grated

1/4 cup breadcrumbs

1/4 cup onion, finely chopped

2 cloves garlic, minced

1 large egg

1 tsp Dijon mustard

Salt and pepper, to taste

1 tbsp olive oil (for cooking)

4 whole wheat burger buns

Fresh lettuce and tomato slices (for serving)

Optional: Avocado slices and AIoli sauce

Instructions
 

Prepare the Mixture: In a large mixing bowl, combine the ground chicken, chopped spinach, grated white cheddar, breadcrumbs, chopped onion, minced garlic, egg, Dijon mustard, salt, and pepper. Use your hands to mix everything until just combined—do not overmix.

    Form the Patties: Divide the mixture into 4 equal portions and shape each portion into a burger patty, making sure they are evenly thick for consistent cooking.

      Cook the Patties: Heat olive oil in a large skillet over medium heat. Once hot, add the chicken patties and cook for about 6-7 minutes on one side until golden brown. Flip and cook for an additional 5-6 minutes until the internal temperature reaches 165°F (75°C) and they are cooked through.

        Toast the Buns: In the last few minutes of cooking, you can toast the burger buns on a separate pan or in the oven until they are lightly golden.

          Assemble the Burgers: Place the cooked chicken patty on the bottom half of the toasted bun. Top with fresh lettuce, tomato slices, and if desired, avocado slices and aioli sauce. Cap with the top half of the bun.

            Serve and Enjoy: Serve the burgers warm with a side salad or sweet potato fries for a delicious meal!
