2 lbs ground beef

1 cup mashed potatoes (cooked)

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon

1/2 cup chopped green onions (plus extra for garnish)

1/2 cup milk

1/2 cup breadcrumbs

2 large eggs

2 tablespoons Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup barbecue sauce (for topping)

Optional: sour cream, for serving

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

    In a large mixing bowl, combine the ground beef, mashed potatoes, cheddar cheese, crumbled bacon, chopped green onions, milk, breadcrumbs, eggs, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are thoroughly incorporated.

      Transfer the meatloaf mixture to the prepared baking sheet, shaping it into a loaf form.

        Spread the barbecue sauce evenly over the top of the meatloaf.

          Bake in the preheated oven for 1 hour, or until the meatloaf reaches an internal temperature of 160°F (70°C).

            Once cooked, remove from the oven and let it rest for 10 minutes before slicing.

              Garnish with additional chopped green onions and serve alongside sour cream if desired.
