Tuscan Chicken Pasta Recipe

2 boneless, skinless chicken breasts

8 ounces of fettuccine or pasta of choice

1 cup cherry tomatoes, halved

2 cups fresh spinach leaves

4 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, drain the rest, and set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and Italian seasoning. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and let rest for about 5 minutes before slicing into strips.

      Flavor the Base: In the same skillet, add the minced garlic and cherry tomatoes. Sauté for about 2 minutes, until the tomatoes soften and begin to burst. If using, sprinkle in the crushed red pepper flakes for some heat.

        Create the Sauce: Lower the heat and pour in the heavy cream, mixing well with the garlic and tomatoes. Let it simmer for 2-3 minutes before adding the grated Parmesan cheese and stirring until melted and creamy. If the sauce is too thick, add the reserved pasta water a little at a time until you reach the desired consistency.

          Combine Everything: Add the fresh spinach into the sauce, stirring until it wilts down. Then, add the cooked fettuccine and sliced chicken to the skillet, tossing everything to combine. Adjust seasoning with more salt and pepper if necessary.

            Serve: Plate the Tuscan chicken pasta, garnishing with freshly chopped basil leaves and a sprinkle of additional Parmesan cheese if desired. Enjoy your delicious meal!
