4 boneless, skinless chicken breasts

1 cup fresh pineapple juice

1/2 cup soy sauce

1/4 cup brown sugar

2 tablespoons rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 tablespoons vegetable oil (for cooking)

Salt and pepper to taste

Marinate the Chicken: In a large bowl, mix together the pineapple juice, soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Reserve about 1/3 of the marinade for later. Add the chicken breasts to the bowl and turn to coat them well. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

    Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade and season both sides with salt and pepper.
