Ingredients

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 large egg

2 tablespoons melted butter (plus extra for greasing the pan)

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional)

Whipped cream and fresh berries for serving (optional)

Instructions

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

Mix Wet Ingredients: In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

Combine: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay. If desired, fold in the chocolate chips for an extra indulgent touch.

Heat the Pan: Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter.

Cook Pancakes: Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown and cooked through.

Serve: Transfer to a warm plate and repeat with the remaining batter. Serve the pancakes warm, topped with whipped cream and fresh berries if desired.

Prep Time: 15 mins | Total Time: 30 mins | Servings: 4 (yielding about 8 pancakes)
