2 cups cooked chicken breast, chopped

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 large red bell pepper, diced

1 cup grape tomatoes, halved

1 avocado, diced

1/4 cup red onion, finely chopped

1/2 cup cilantro, chopped

1/2 cup shredded cheese (cheddar or Mexican blend)

1 lime, juiced

3 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Tortilla chips for crunch (optional)

Instructions
 

In a large mixing bowl, combine the chopped cooked chicken, black beans, corn, red bell pepper, grape tomatoes, avocado, red onion, and cilantro.

    In a small bowl, whisk together the lime juice, olive oil, ground cumin, chili powder, salt, and pepper until well mixed.

      Pour the dressing over the salad mixture and gently toss to coat all the ingredients evenly.

        Taste and adjust seasoning if needed, adding more lime juice, salt, or spices as preferred.
