2 boneless, skinless chicken breasts

1 cup jasmine rice

2 cups water or chicken broth

1/4 cup soy sauce

1/4 cup mirin (Japanese sweet rice wine)

2 tablespoons honey or brown sugar

1 tablespoon sesame oil

1 tablespoon freshly grated ginger

2 cloves garlic, minced

1 cup broccoli florets

1 medium carrot, julienned

1/2 cup sliced green onions

Sesame seeds for garnish

Salt and pepper to taste

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and 2 cups of water or chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until the rice is fluffy and liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    Make the Teriyaki Sauce: In a small bowl, whisk together soy sauce, mirin, honey or brown sugar, sesame oil, grated ginger, and minced garlic. Set aside.

      Cook the Chicken: In a large skillet over medium heat, add a teaspoon of vegetable oil (or more as needed). Season the chicken breasts with salt and pepper. Cook for about 5-7 minutes per side, or until fully cooked and no longer pink inside. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

        Add Vegetables: Once the chicken is cooked, remove it from the skillet and let it rest. In the same skillet, add broccoli florets and julienned carrots. Sauté for about 3-4 minutes until the vegetables are tender yet crisp.
