Sweet And Spicy Thai Chicken

Ingredients
  

1 lb chicken thighs, boneless and skinless

2 tablespoons vegetable oil

4 cloves garlic, minced

1-inch piece of ginger, grated

1 red bell pepper, sliced

1 cup snow peas

2 green onions, chopped

1/4 cup soy sauce

2 tablespoons fish sauce

2 tablespoons honey

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon lime juice

1 teaspoon cornstarch mixed with 2 tablespoons water

Fresh cilantro, for garnish

Lime wedges, for serving

Marinate the Chicken: In a large bowl, combine soy sauce, fish sauce, honey, sriracha, and lime juice. Add the chicken thighs, ensuring they are well-coated. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

    Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade for later) and add it to the skillet. Sear the chicken for 5-7 minutes on each side until golden brown and cooked through. Remove chicken from the skillet and set aside.

      Stir-Fry the Vegetables: In the same skillet, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Add the red bell pepper and snow peas, and stir-fry for 2-3 minutes until the veggies are just tender but still crisp.

        Combine and Thicken: Pour the reserved marinade into the skillet. Bring it to a gentle simmer, then add the cornstarch slurry (cornstarch mixed with water). Stir until the sauce thickens, about 1 minute.

          Return Chicken: Slice the cooked chicken into strips and return it to the skillet, tossing to coat in the sauce. Add the chopped green onions, mixing well.
