2 large red onions, thinly sliced

2 tablespoons sumac

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon honey or maple syrup (optional for sweetness)

Fresh parsley, chopped, for garnish

Instructions
 

Begin by peeling and thinly slicing the red onions. Place them in a large mixing bowl.

    In a separate bowl, whisk together the olive oil, lemon juice, sumac, salt, pepper, and honey (if using) until well combined.

      Drizzle the dressing over the sliced onions and toss until evenly coated.

        Allow the onions to marinate for at least 30 minutes at room temperature. This will enhance the flavors and soften the bite of the onions.

          After marinating, taste the mixture and adjust seasoning if necessary, adding more salt, pepper, or lemon juice according to your preference.

            Transfer the marinated onions to a serving dish and garnish with chopped fresh parsley.
