1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

For the crisp topping:

1 cup old-fashioned rolled oats

1/2 cup all-purpose flour

1/3 cup brown sugar, packed

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

1/4 cup chopped nuts (such as pecans or walnuts) (optional)

Instructions

Prepare the Fruit Filling:

    - In a mixing bowl, combine the sliced strawberries and peaches.

      - Add the granulated sugar, lemon juice, vanilla extract, and cornstarch.

        - Gently toss until the fruit is well coated with the mixture. Set aside to let the flavors meld.

          Make the Crisp Topping:

            - In another bowl, mix together the rolled oats, all-purpose flour, brown sugar, salt, and ground cinnamon.

              - Pour in the melted butter and mix until the topping is well combined and crumbly. If using, fold in the chopped nuts for added crunch.

                Assemble the Crisp:

                  - Preheat your oven to 350°F (175°C).

                    - In a greased 9-inch baking dish, spread the fruit mixture evenly on the bottom.

                      - Sprinkle the oatmeal topping generously over the fruit layer, ensuring even coverage.

                        Bake:

                          - Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbling.

                            Cool and Serve:

                              - Once done, remove the crisp from the oven and allow it to cool slightly.

                                - Serve warm, optionally topped with vanilla ice cream or whipped cream for an extra indulgent treat.
