Strawberry Lemon Blondies

1 cup unsalted butter, melted

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

1 tablespoon vanilla extract

Zest of 1 lemon

1/4 cup fresh lemon juice

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup fresh strawberries, hulled and diced

1/2 cup white chocolate chips (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper for easy removal.

    Mix wet ingredients: In a large bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until smooth. Add the eggs, vanilla extract, lemon zest, and lemon juice. Mix until fully incorporated.

      Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

        Combine mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

          Fold in strawberries and chocolate chips: Gently fold the diced strawberries and white chocolate chips (if using) into the batter until evenly distributed.

            Bake: Pour the batter evenly into the prepared baking dish. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out mostly clean.

              Cool and cut: Allow the blondies to cool in the pan for about 10 minutes. Then, lift them out with the parchment paper and let them cool completely on a wire rack before cutting into squares.
