Spinach and Feta Quesadillas (20 minutes)

Packed with fresh spinach, creamy feta, and gooey mozzarella, this quick recipe is perfect for a satisfying lunch or dinner. Just sauté the spinach, mix with cheeses, and grill until golden brown. Ingredients
  

2 cups fresh spinach, washed and chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1/2 teaspoon garlic powder

Salt and pepper, to taste

Optional toppings: salsa, sour cream, or avocado slices

Instructions
 

Heat a large skillet over medium heat and add the olive oil.

    Once the oil is hot, add the chopped spinach and sauté for about 2-3 minutes until wilted.

      In a mixing bowl, combine the cooked spinach, crumbled feta cheese, shredded mozzarella, garlic powder, salt, and pepper. Mix until well combined.

        Place one tortilla in the skillet and spread a quarter of the spinach and cheese mixture evenly over half of the tortilla.

          Fold the tortilla in half and cook for about 2-3 minutes on each side, or until golden brown and the cheese has melted.

            Remove from the skillet and repeat the process with the remaining tortillas and filling.

              Slice the quesadillas into wedges and serve warm, optionally with salsa, sour cream, or avocado slices for dipping.
