Spicy Pineapple Jalapeño Chutney

1 ripe pineapple, peeled and diced (about 4 cups)

2 jalapeños, seeds removed and finely chopped (adjust for heat preference)

1 small red onion, finely diced

1 cup brown sugar

1/2 cup apple cider vinegar

1 tablespoon ginger, freshly grated

1 teaspoon ground cumin

1/2 teaspoon ground cinnamon

1/4 teaspoon turmeric powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup fresh cilantro, chopped (optional)

1 tablespoon lime juice

Instructions
 

Prepare the Ingredients: In a large bowl, combine the diced pineapple, jalapeños, and red onion. Mix well to incorporate all the ingredients.

    Cook the Chutney: In a medium saucepan over medium heat, add the pineapple mixture. Stir in the brown sugar, apple cider vinegar, ginger, cumin, cinnamon, turmeric, salt, and black pepper.

      Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer uncovered for about 30-35 minutes, stirring occasionally, until the chutney thickens and becomes syrupy.

        Final Touches: Once thickened, remove the saucepan from heat. Stir in the chopped cilantro and lime juice for an added zing.

          Cool and Store: Allow the chutney to cool completely. Transfer it to sterilized jars for storage. It can be refrigerated for up to two weeks.
