Southwest Ground Beef and Sweet Potato Skillet

1 pound ground beef (90% lean)

2 medium sweet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced bell pepper (any color)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Optional: avocado slices and lime wedges for serving

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced sweet potatoes and cook for about 5-7 minutes, stirring occasionally, until they begin to soften.

    Add Aromatics: Add the chopped onion and minced garlic to the skillet with the sweet potatoes. Cook for another 3-4 minutes until the onion becomes translucent.

      Brown the Beef: Push the sweet potato and onion mixture to the side of the skillet. Add the ground beef to the skillet and cook for 5-6 minutes, breaking it apart with a spatula until browned and cooked through.

        Season the Mixture: Stir in the black beans, corn, diced bell pepper, chili powder, cumin, smoked paprika, salt, and pepper. Mix everything together and cook for an additional 5-7 minutes, allowing the flavors to meld and the bell pepper to soften.

          Finish Cooking: Once everything is cooked, taste and adjust seasoning if necessary. Cook until everything is heated through and the sweet potatoes are tender.

            Garnish and Serve: Remove from heat and garnish with fresh cilantro. Serve warm with avocado slices and lime wedges on the side for extra flavor.
