Slow Cooker Cowboy Casserole - An Organized Chaos

Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup shredded cheddar cheese

1.5 cups tater tots (frozen)

1 packet taco seasoning

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey with the diced onion and minced garlic. Cook until the meat is no longer pink, then drain excess fat.

    Combine Ingredients: In a large bowl, combine the browned meat, black beans, corn, diced tomatoes (with juices), frozen mixed vegetables, and taco seasoning. Stir until well mixed. Season with salt and pepper to taste.

      Layer in the Slow Cooker: Pour half of the meat mixture into the bottom of the slow cooker. Sprinkle half of the shredded cheddar cheese over the mixture. Add the remaining meat mixture on top and finish with the tater tots, pressing them down lightly. Top with the remaining cheese.

        Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the tater tots are golden and crispy, and the cheese is melted and bubbly.

          Serve: Once cooked, garnish with fresh cilantro if desired. Scoop portions into bowls and serve hot.
