2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup sugar (adjust to taste)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

1/2 teaspoon vanilla extract

1/2 cup milk (or almond milk for a dairy-free option)

1 large egg, beaten

1/4 cup chopped walnuts or pecans (optional)

1/4 cup chocolate chips (optional)

Oil for frying (coconut oil or vegetable oil works well)

Powdered sugar for dusting (optional)

Instructions
 

In a large mixing bowl, combine the mashed bananas with the sugar, vanilla extract, and beaten egg. Stir until well combined.

    In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

      Gradually add the dry ingredients to the banana mixture, alternating with milk, and mix gently until just combined. Do not overmix – a few lumps are okay.

        If using, fold in the chopped nuts and chocolate chips until evenly distributed.

          Heat a skillet over medium heat and add about 2 tablespoons of oil. Allow the oil to heat for a minute.

            Using a tablespoon or ice cream scoop, drop spoonfuls of the batter onto the skillet, leaving space between each fritter.

              Cook for about 2–3 minutes on each side, or until golden brown and cooked through. Adjust the heat as needed to avoid burning.

                Once cooked, remove the fritters and place them on a paper towel to drain excess oil.

                  Dust with powdered sugar if desired, and serve warm with maple syrup or your favorite dipping sauce.
