Sheet Pan Sausage and Veggies

Ingredients
  

1 pound Italian sausage (mild or spicy, your choice)

2 cups bell peppers (mixed colors, sliced)

1 cup red onion (sliced)

2 cups zucchini (sliced into half-moons)

1 cup cherry tomatoes (halved)

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sheet Pan: Line a large sheet pan with parchment paper for easy cleanup.

      Slice the Sausages: Cut the Italian sausages into bite-sized pieces and place them in a large mixing bowl.

        Add the Veggies: To the same bowl, add the sliced bell peppers, red onion, zucchini, and cherry tomatoes.

          Season the Mixture: Drizzle the olive oil over the sausage and veggies. Sprinkle the garlic powder, smoked paprika, dried oregano, salt, and pepper. Toss everything together until evenly coated in the seasoning.
