2 cups cooked jasmine rice (preferably day-old)

2 boneless, skinless chicken thighs, diced

3 tablespoons Japanese BBQ sauce (like Yakiniku or Teriyaki)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 green onions, sliced

2 cloves garlic, minced

1 small carrot, diced

1/2 cup frozen peas

1/4 cup chopped red bell pepper

2 large eggs

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Ingredients: Start by ensuring that all your ingredients are ready. If using day-old rice, breaking up any clumps can help ensure a better texture.

    Marinate the Chicken: In a medium bowl, combine diced chicken with 2 tablespoons of Japanese BBQ sauce. Allow it to marinate for at least 15 minutes while you prep other ingredients.

      Cook the Eggs: Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Scramble the eggs until fully cooked, then transfer to a plate and set aside.

        Sauté the Chicken: In the same skillet, add another tablespoon of vegetable oil. Once the oil is hot, add the marinated chicken. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and caramelized. Remove from the skillet and set aside.

          Sauté Veggies: In the same skillet, add sesame oil. Sauté the minced garlic, diced carrot, red bell pepper, and green onions for about 3-4 minutes until they are tender-crisp.

            Combine Ingredients: Add the cooked rice to the skillet and stir to combine with the veggies. Pour in the remaining tablespoon of soy sauce and the remaining 1 tablespoon of BBQ sauce, mixing everything well until evenly coated.

              Add Chicken and Eggs: Add the cooked chicken and scrambled eggs back into the skillet. Toss everything together and add frozen peas. Stir-fry for another 3-4 minutes until everything is heated through and the rice starts to crisp slightly.

                Serve: Remove from heat. Garnish with sesame seeds and, if desired, fresh cilantro. Serve hot for the ultimate savory experience!
