Made with creamy coconut milk, sweet watermelon, and nutritious chia seeds, this recipe is perfect for a healthy breakfast or snack. Simply blend watermelon, mix with other ingredients, and let it set for a couple of hours or overnight. Layer it in a mason jar with extra watermelon and crunchy granola. 2 cups watermelon, cubed and seeded

1 cup coconut milk (or almond milk)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

Pinch of salt

Fresh mint leaves, for garnish

Additional watermelon cubes, for topping

Optional: granola or nuts for crunch

Instructions
 

In a blender or food processor, add the cubed watermelon and blend until smooth. You can strain it through a fine sieve if you prefer a smoother texture.

    In a medium bowl, mix together the watermelon juice, coconut milk, chia seeds, honey (or maple syrup), vanilla extract, and a pinch of salt. Whisk until well combined.

      Let the mixture sit for about 10 minutes, then stir again to prevent the chia seeds from clumping.

        Once the chia seeds are well incorporated, cover the bowl and refrigerate for at least 2 hours, or overnight for best results. This allows the chia seeds to absorb the liquid and thicken the pudding.

          To assemble the breakfast jar, layer the chia pudding into a mason jar, adding a layer of chopped watermelon and a sprinkle of granola or nuts in between layers if desired.

            Top with a few extra watermelon cubes and garnish with fresh mint leaves.
