Quick & Easy Homemade Butter Chicken

Ingredients
  

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons butter

1 tablespoon vegetable oil

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece ginger, grated

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust to taste)

400g canned diced tomatoes

1 cup heavy cream

Salt to taste

Fresh coriander, chopped (for garnish)

Cooked basmati rice or naan (for serving)

Instructions
 

In a large pan, heat the butter and vegetable oil over medium heat until melted and hot.

    Add the chopped onions and sauté until they are translucent and starting to brown, about 5-7 minutes.

      Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

        Add the ground cumin, coriander, garam masala, turmeric, and red chili powder. Stir well for 1 minute to toast the spices.

          Increase the heat to medium-high and add the chicken pieces. Cook until they are browned on all sides, about 5-6 minutes.

            Pour in the canned diced tomatoes along with their juice. Stir everything together, reduce the heat to low, and let it simmer for about 10-15 minutes until the chicken is cooked through and tender.

              Slowly stir in the heavy cream. Cook for an additional 5 minutes, allowing the sauce to thicken and the flavors to meld. Season with salt to taste.

                Garnish with fresh chopped coriander and serve hot over basmati rice or with warm naan.
