Peruvian Grilled Chicken Salad

Ingredients
  

2 large chicken breasts

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

4 cups mixed greens (romaine, arugula, spinach)

1 cup cherry tomatoes, halved

1 avocado, sliced

1/2 red onion, thinly sliced

1/2 cup corn (fresh, canned, or frozen)

1/4 cup cilantro, chopped

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together olive oil, soy sauce, lime juice, garlic powder, cumin, salt, and pepper. Add the chicken breasts and coat them well. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from grill and let it rest for 5 minutes before slicing.

      Prepare the Salad: In a large bowl, combine the mixed greens, cherry tomatoes, avocado, red onion, corn, and cilantro. Toss gently to mix everything evenly.

        Assemble the Salad: Slice the grilled chicken and place it on top of the salad mixture. Drizzle with additional lime juice if desired and sprinkle with extra salt and pepper to taste.

          Serve: Serve the salad chilled or at room temperature, garnished with lime wedges on the side.
