Ingredients
  

2 salmon fillets (6 oz each)

1 cup orzo pasta

2 tablespoons olive oil

2 cloves garlic, minced

4 cups vegetable broth or chicken broth

Juice and zest of 1 large lemon

1 cup cherry tomatoes, halved

1 cup baby spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for serving)

Sear the Salmon: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Add the fillets to the skillet, skin-side down, and cook for about 4-5 minutes until the skin is crispy. Carefully flip and cook for another 3-4 minutes until cooked through. Remove from the skillet and set aside.

    Prepare the Orzo: In the same skillet, add another tablespoon of olive oil. Add minced garlic and sauté for 1 minute until fragrant. Stir in the orzo and toast it for about 2-3 minutes, stirring frequently.

      Cook the Orzo: Pour in the vegetable or chicken broth, and bring the mixture to a boil. Reduce the heat to a simmer and let it cook for 8-10 minutes until the orzo is al dente and most of the liquid has been absorbed. Stir in the lemon juice, zest, cherry tomatoes, and baby spinach.

        Combine: Gently nestle the cooked salmon fillets back into the skillet with the orzo. Spoon some of the lemony orzo and veggies over the top of the salmon. Cover the skillet for 1-2 minutes to allow the flavors to meld and the spinach to wilt.

          Serve: Garnish with fresh parsley and add a sprinkle of red pepper flakes if desired. Serve the dish warm, enjoying the bright lemon flavors alongside the rich salmon.
