1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups gnocchi (store-bought or homemade)

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

1 cup chicken broth

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

1 cup baby spinach

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the pot and sauté until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook Onions and Garlic: In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

      Add Gnocchi and Broth: Stir in the gnocchi, chicken broth, heavy cream, lemon zest, and lemon juice. Mix well and bring to a gentle boil.

        Simmer: Reduce the heat to medium-low and return the cooked chicken to the pot. Add the dried thyme, oregano, and freshly squeezed lemon juice. Cover and let the mixture simmer for about 5-7 minutes, or until the gnocchi are cooked (they will float to the top when done).

          Stir in Spinach: Once the gnocchi are cooked, stir in the baby spinach and let it wilt for about 2 minutes.

            Adjust Seasoning: Taste the dish and add more salt, pepper, or lemon juice as desired.
