Ingredients

1 can (20 oz) crushed pineapple, drained

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/2 cup shredded coconut (optional)

Fresh pineapple slices and mint leaves for garnish (optional)

Instructions

Prepare the crust: In a medium bowl, combine the graham cracker crumbs and melted butter, mixing until well combined. Press the mixture firmly into the bottom of a 9-inch round or square dish to form a crust.

Blend the cream cheese mixture: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, continuing to mix until creamy.

Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

Add the pineapple: Gently fold in the drained crushed pineapple (and shredded coconut if using) into the cream cheese mixture, ensuring everything is well incorporated.

Assemble the dessert: Pour the pineapple cream mixture over the prepared graham cracker crust, smoothing the top with a spatula.

Chill: Cover and refrigerate the dessert for at least 4 hours, or until set. For best results, let it chill overnight.

Serve and garnish: Once set, slice the dessert into squares or wedges. If desired, garnish with fresh pineapple slices and mint leaves before serving.
