Mediterranean Salmon

Juicy salmon fillets are marinated in a flavorful blend of olive oil, garlic, and herbs, then grilled or baked to perfection. Topped with a vibrant salsa made of cherry tomatoes, Kalamata olives, and capers, this dish is both fresh and satisfying. Perfect for healthy weeknight meals or a special occasion. Ingredients
  

4 salmon fillets (6 oz each)

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Juice of 1 lemon

Salt and pepper to taste

1 cup cherry tomatoes, halved

½ cup Kalamata olives, pitted and roughly chopped

¼ cup red onion, finely diced

¼ cup fresh parsley, chopped

2 tablespoons capers, rinsed and drained

1 tablespoon balsamic vinegar

Instructions
 

Prepare the Marinade: In a small bowl, mix together the olive oil, garlic, dried oregano, dried thyme, lemon juice, salt, and pepper.

    Marinate the Salmon: Place the salmon fillets in a resealable plastic bag or a shallow dish. Pour the marinade over the fillets, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes.

      Make the Olive Salsa: In another bowl, combine the cherry tomatoes, Kalamata olives, red onion, parsley, capers, and balsamic vinegar. Mix well and set aside to allow the flavors to meld while the salmon marinates.

        Preheat the Grill or Oven: If using a grill, preheat to medium-high heat. If baking, preheat your oven to 400°F (200°C).

          Cook the Salmon: Remove the salmon from the marinade and discard the leftover marinade. If grilling, oil the grill grates and cook the salmon for about 4-5 minutes per side, or until cooked through and flaky. If baking, place the fillets on a lined baking sheet and bake for 12-15 minutes, or until they easily flake with a fork.

            Serve: Once cooked, place the salmon on plates and top each fillet generously with the olive salsa. Garnish with extra parsley if desired.
