2 large boneless, skinless chicken breasts

1/4 cup olive oil

Zest and juice of 1 large lemon

3 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 cup quinoa or couscous

2 cups vegetable or chicken broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

Fresh parsley for garnish

Optional: olives and avocado slices for serving

Marinate the Chicken: In a bowl, combine the olive oil, lemon zest, lemon juice, dill, garlic, salt, and pepper. Add the chicken breasts, ensuring they are well coated with the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours.
