Mediterranean Chicken Pasta Salad

Ingredients
  

2 cups rotini pasta

1 lb boneless skinless chicken breast

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1/3 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Cook the Pasta: Begin by cooking the rotini pasta according to package instructions. Once al dente, drain and rinse under cold water to cool and prevent sticking. Set aside.

    Prepare the Chicken: In a skillet over medium heat, add a tablespoon of olive oil. Season the chicken breasts with salt, pepper, and oregano. Cook the chicken for about 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from the skillet and let it rest for 5 minutes before cutting it into bite-sized pieces.

      Mix the Dressing: In a small bowl, whisk together the remaining olive oil, red wine vinegar, salt, pepper, and a pinch of oregano. Set aside.

        Assemble the Salad: In a large bowl, combine the cooled pasta, cooked chicken pieces, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.

          Dress the Salad: Pour the dressing over the salad mixture and toss gently to combine, making sure everything is well coated.

            Chill: Let the salad sit in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
