2 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 tablespoon Dijon mustard

½ cup sun-dried tomatoes, chopped

1 cup spinach, fresh

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

8 oz fettuccine or spaghetti pasta

Fresh basil, for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or spaghetti according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: Season the chicken breasts generously with salt and pepper on both sides.

      Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken breasts and cook for about 5-7 minutes on each side or until golden brown and cooked through. Once done, remove the chicken from the skillet and let it rest.

        Make the Sauce: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and chicken broth, then stir in the Dijon mustard. Allow the mixture to simmer for about 3-5 minutes, or until slightly thickened.

          Add Ingredients: Stir in the sun-dried tomatoes, fresh spinach, Italian seasoning, and Parmesan cheese. Let it simmer for another couple of minutes until the spinach wilts.
