8 large whole eggs

1 cup egg whites (about 8 egg whites)

1 cup black beans, drained and rinsed

1 cup cooked lean turkey sausage or ground turkey

1 red bell pepper, diced

1 small onion, diced

1 cup baby spinach, chopped

1 cup shredded low-fat cheese (cheddar or Mexican blend)

1 tsp garlic powder

1 tsp cumin

Salt and pepper to taste

8 whole wheat or low-carb tortillas

Salsa for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the whole eggs and egg whites until well combined. Add in the garlic powder, cumin, salt, and pepper to taste.

      Cook the Vegetables: In a skillet over medium heat, sauté the diced onion and red bell pepper until they begin to soften, about 5 minutes. Add the chopped spinach and cook until wilted. Remove from heat and let cool slightly.

        Combine Ingredients: Add the sautéed vegetables, black beans, and turkey sausage to the egg mixture, stirring until everything is evenly distributed. Finally, fold in the shredded cheese.

          Bake the Mixture: Pour the egg mixture onto the prepared baking sheet, spreading it out evenly. Bake in the preheated oven for 20-25 minutes or until the eggs are fully set and lightly golden on top.

            Assemble the Burritos: Once the egg mixture is cooked and has cooled slightly, remove it from the oven. Cut it into 8 equal squares. Place each square onto a whole wheat tortilla and roll it up tightly.

              Optional Second Bake: If desired, you can arrange the rolled burritos back onto the baking sheet and bake for an additional 5-10 minutes to make them crispy.

                Serve: Serve the burritos warm, with salsa on the side if you like.
