8 oz. spaghetti or linguine

1 lb. large shrimp, peeled and deveined

2 cups fresh spinach, washed and roughly chopped

4 cloves garlic, minced

1 lemon, juiced and zested

1/4 cup olive oil

1/2 cup cherry tomatoes, halved

1/2 teaspoon red pepper flakes (adjust based on spice preference)

Salt and pepper to taste

1/4 cup freshly grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish

Cook the Pasta: In a large pot, boil salted water and add the spaghetti. Cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp and season with salt, pepper, and red pepper flakes. Cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining olive oil. Sauté the minced garlic until fragrant, about 1 minute. Add the cherry tomatoes and cook for another 2 minutes until they soften.

        Combine Ingredients: Add the spinach to the skillet and cook until just wilted. Stir in the lemon juice and zest. Return the cooked shrimp to the skillet.

          Mix with Pasta: Add the drained pasta directly to the skillet. Toss everything together, adding reserved pasta water a little at a time until you reach the desired sauce consistency. Mix well to ensure the pasta is evenly coated.
