8 oz whole wheat pasta (fusilli or penne work well)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, diced (red or yellow for sweetness)

1/4 cup red onion, finely chopped

1/4 cup fresh basil leaves, roughly chopped

Zest of 1 lemon

1/4 cup lemon juice (freshly squeezed)

3 tbsp olive oil

1 tsp garlic powder

Salt and pepper to taste

1/4 cup nutritional yeast (optional, for a cheesy flavor)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
