Korean Ground Beef Bowl

1 lb (450g) ground beef

2 tablespoons soy sauce

1 tablespoon brown sugar

1 tablespoon sesame oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon gochujang (Korean chili paste)

1 teaspoon rice vinegar

1/4 cup green onions, chopped

1 cup carrots, julienned

1 cup baby spinach

2 cups cooked jasmine rice

Sesame seeds for garnish

Sliced cucumbers (optional, for serving)

Instructions
 

Prepare the Marinade: In a bowl, mix soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, gochujang, and rice vinegar until well combined.

    Cook the Beef: In a large skillet, over medium-high heat, cook the ground beef until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).

      Add the Marinade: Once the beef is browned, drain any excess fat. Stir in the marinade and cook for an additional 3-4 minutes until the sauce thickens and coats the beef nicely.

        Stir in Vegetables: Add the julienned carrots to the skillet and cook for 2 minutes. Then, toss in the baby spinach and cook until just wilted (about 1 minute). Mix well.

          Assemble the Bowls: In serving bowls, place a generous scoop of cooked jasmine rice. Spoon the Korean ground beef mixture on top, followed by a sprinkle of chopped green onions and sesame seeds.

            Garnish and Serve: Optionally, add sliced cucumbers for a refreshing crunch. Serve hot and enjoy!
