For the Meatballs:

1 lb ground beef or pork (or a blend of both)

1/2 cup panko bread crumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

2 teaspoons grated ginger

1 tablespoon brown sugar

1 teaspoon black pepper

1 tablespoon gochujang (Korean chili paste)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang

1 tablespoon lime juice

1 teaspoon sesame oil

1 teaspoon honey

1 teaspoon Sriracha (adjust to taste)

Salt to taste

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Meatball Mixture: In a large mixing bowl, combine ground beef or pork, panko bread crumbs, chopped green onions, minced garlic, soy sauce, sesame oil, grated ginger, brown sugar, black pepper, and gochujang. Mix until just combined; be careful not to overmix.

      Form the Meatballs: With your hands, form the mixture into 1.5-inch meatballs, spacing them evenly on the prepared baking sheet.

        Bake: Bake the meatballs in the preheated oven for 18-20 minutes or until they are cooked through and have a nice golden-brown color.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, in a small bowl, whisk together the mayonnaise, gochujang, lime juice, sesame oil, honey, Sriracha, and a pinch of salt. Adjust the Sriracha and gochujang to reach your desired spice level.
