Korean BBQ Meatballs with Spicy Mayo Dip

1 lb ground beef (or a mix of beef and pork)

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

2 green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons soy sauce

2 tablespoons gochujang (Korean chili paste)

1 tablespoon sesame oil

1 tablespoon sugar

1 teaspoon black pepper

1 egg

2 tablespoons sesame seeds (for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon gochujang

1 teaspoon lime juice

1 teaspoon honey (optional for sweetness)

Salt to taste

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Meatball Mixture: In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, green onions, garlic, ginger, soy sauce, gochujang, sesame oil, sugar, black pepper, and egg. Mix until well combined.

      Form the Meatballs: Wet your hands slightly to prevent sticking, and shape the mixture into small meatballs, about 1 inch in diameter. Place them on the prepared baking sheet.

        Bake the Meatballs: Bake in the preheated oven for about 20-25 minutes or until the meatballs are cooked through and browned on the outside. An internal temperature of 160°F (70°C) confirms they are done.

          Prepare the Spicy Mayo Dip: In a small bowl, whisk together the mayonnaise, gochujang, lime juice, and honey (if using). Taste and adjust the seasoning with a pinch of salt if necessary. Set aside.

            Serve: Once the meatballs are cooked, remove them from the oven. Let them cool for a few minutes. Serve the meatballs warm, garnished with sesame seeds, alongside the spicy mayo dip for dipping. Enjoy!
