Ingredients

For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs (Panko preferred)

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1/4 cup soy sauce

1 tbsp sesame oil

2 tbsp brown sugar

1 tsp ginger, grated

1 egg, lightly beaten

Salt and pepper to taste

Sesame seeds for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tbsp gochujang (Korean chili paste)

1 tsp rice vinegar

1 tsp sesame oil

1 tsp honey (optional)

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, green onions, garlic, soy sauce, sesame oil, brown sugar, ginger, and egg. Season with salt and pepper. Mix until just combined; do not overwork the meat.

Form Meatballs: Using your hands, scoop mixture and roll into balls about 1 to 1.5 inches in diameter and place them on a baking sheet lined with parchment paper.

Bake Meatballs: Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and browned on the outside.

Prepare the Spicy Mayo Dip: While the meatballs are baking, whisk together the mayonnaise, gochujang, rice vinegar, sesame oil, honey (if using), and a pinch of salt in a small bowl. Adjust the spice level by adding more gochujang to taste.

Serve: Once the meatballs are ready, garnish with sesame seeds and serve hot alongside the spicy mayo dip for dipping.

Enjoy: Relish your delicious Korean BBQ meatballs with a kick!
