Jamaican Shrimp Pasta: A Creamy Delight

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 teaspoon paprika

1 teaspoon allspice

1/2 teaspoon cayenne pepper (adjust to taste)

1 cup coconut milk

1/2 cup heavy cream

1/4 cup fresh cilantro, chopped

Salt and pepper, to taste

Lime wedges, for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced red and green bell peppers. Sauté for about 3-4 minutes until they begin to soften.

      Add the Shrimp: Stir in the minced garlic, thyme, paprika, allspice, cayenne pepper, salt, and pepper. Then, add the shrimp and cook until they turn pink and opaque, about 3-5 minutes.

        Make the Sauce: Pour in the coconut milk and heavy cream, stirring to combine. Let the sauce simmer gently for about 5 minutes until it thickens slightly. Taste and adjust the seasoning if necessary.

          Combine Pasta and Sauce: Add the cooked fettuccine to the skillet. Toss to coat the pasta in the creamy shrimp sauce. If the sauce is too thick, you can add a splash of reserved pasta water to reach your desired consistency.

            Finish and Serve: Remove from heat, then stir in the fresh cilantro. Serve the pasta warm, garnished with lime wedges for an extra zing.
