2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp salt

½ cup unsalted butter, melted

½ cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup buttermilk

2 cups peeled, diced apples (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

1 tbsp granulated sugar (for topping)

1 tsp ground cinnamon (for topping)

Instructions
 

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well combined.

      In another bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until smooth and creamy.

        Add the eggs to the sugar mixture, one at a time, mixing well after each addition. Then stir in the vanilla extract.

          Gradually add the buttermilk to the wet mixture, mixing until all ingredients are combined.

            Fold the dry ingredients into the wet mixture gently until just combined. Be careful not to overmix; small lumps are okay.

              Gently fold in the diced apples and nuts, if using, until evenly distributed throughout the batter.

                Spoon the batter into the prepared muffin cups, filling each about ¾ full.

                  In a small bowl, mix together the granulated sugar and ground cinnamon for the topping. Sprinkle this mixture generously over the muffin batter in the cups.

                    Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

                      Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
