Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

2 teaspoons ground cinnamon

½ teaspoon ground nutmeg

½ cup unsalted butter, melted

½ cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups apples, peeled, cored, and diced (about 2 medium apples)

½ cup chopped walnuts or pecans (optional)

2 tablespoons sugar (for sprinkling on top)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with butter or cooking spray.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg until well combined. Set aside.

Combine Wet Ingredients: In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Add Buttermilk: Pour in the buttermilk and mix until fully combined.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

Add Apples and Nuts: Fold in the diced apples and nuts (if using) gently until evenly distributed in the batter.

Fill Muffin Tins: Divide the batter evenly among the prepared muffin tins, filling each cup about 2/3 full.

Sprinkle Sugar: Sprinkle a little sugar on top of each muffin batter to create a sweet crust.

Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.

Cool and Serve: Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
