Ingredients

1 cup apple cider

1/4 cup unsalted butter, melted

1/2 cup granulated sugar

1/4 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray or oil.

Prepare the Cider: In a small saucepan over medium heat, bring the apple cider to a boil. Reduce heat and let it simmer for about 10-15 minutes, until the cider is reduced to about 1/2 cup. Allow it to cool slightly.

Combine Wet Ingredients: In a large mixing bowl, whisk together the melted butter, granulated sugar, brown sugar, egg, vanilla extract, and the reduced apple cider until well combined.

Mix Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. Be careful not to overmix; a few lumps are okay!

Fill the Donut Pan: Pour the batter into a piping bag or a zip-top bag with one corner snipped off. Pipe the batter into each donut cavity, filling about 3/4 full.

Bake: Bake in the preheated oven for 15-18 minutes or until the donuts are lightly golden and a toothpick inserted into the center comes out clean.

Make the Coating: While the donuts are baking, combine the 1/4 cup granulated sugar and 1 teaspoon cinnamon in a shallow dish.

Cool and Coat: Once the donuts are baked, let them cool in the pan for about 5 minutes before transferring them to a wire rack. While they are still warm, coat them in the cinnamon-sugar mixture so they are evenly coated.

Serve and Enjoy: Allow the coated donuts to cool slightly more, then serve immediately for the best taste, or store in an airtight container for up to 2 days.
