2 lbs chicken thighs (boneless, skinless)

1 cup soy sauce

1 cup pineapple juice

1/2 cup brown sugar

1/4 cup rice vinegar

1/4 cup ketchup

2 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

1 teaspoon sesame oil

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

3 green onions (sliced, for garnish)

Fresh pineapple slices (optional, for grilling)

Instructions
 

Prepare the Marinade: In a large bowl, whisk together soy sauce, pineapple juice, brown sugar, rice vinegar, ketchup, garlic, ginger, sesame oil, black pepper, and red pepper flakes until the sugar dissolves.

    Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight for more flavor.

      Preheat the Grill: Heat your grill to medium-high heat. If using charcoal, create a two-zone fire for direct and indirect grilling.

        Grill the Chicken: Remove the chicken from the marinade (reserve the marinade) and place it on the hot grill. Cook for about 6-7 minutes on one side, then flip and cook for an additional 6-7 minutes until the internal temperature reaches 165°F (75°C).

          Baste the Chicken: In the last minutes of grilling, brush some of the reserved marinade onto the chicken for extra flavor. You can also grill pineapple slices alongside the chicken during this time for a sweet touch.

            Rest and Serve: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing. Garnish with sliced green onions and serve with grilled pineapple if desired.
