Ingredients

1 lb fresh salmon, skinless and boneless, cut into bite-sized cubes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

1/4 cup hot honey (store-bought or homemade)

1 tablespoon soy sauce

1 tablespoon lemon juice

Fresh parsley, finely chopped (for garnish)

Red pepper flakes (optional, for extra heat)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Marinade: In a bowl, mix the hot honey, soy sauce, and lemon juice until well combined. Reserve a couple of tablespoons for drizzling later.

Season the Salmon: In a separate bowl, toss the salmon cubes with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Make sure the salmon is evenly coated.

Marinate the Salmon: Pour the hot honey mixture over the seasoned salmon and gently toss to coat. Let it marinate for 15-20 minutes to absorb the flavors.

Bake the Salmon Bites: Arrange the marinated salmon bites on the prepared baking sheet in a single layer. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Final Touches: Remove the salmon bites from the oven and drizzle the reserved hot honey mixture over the top. If desired, sprinkle with red pepper flakes for an extra kick.

Serve: Garnish with freshly chopped parsley and serve hot as an appetizer or over rice for a main dish!
