2 boneless, skinless chicken breasts

3 tablespoons honey

2 tablespoons lime juice (freshly squeezed)

1 tablespoon soy sauce

1 teaspoon minced garlic

1 teaspoon ground cumin

Salt and pepper to taste

1 cup jasmine rice

1 3/4 cups water or chicken broth

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

2 tablespoons fresh cilantro, chopped

1 tablespoon olive oil

Lime wedges, for garnish

Marinate the Chicken: In a bowl, whisk together honey, lime juice, soy sauce, minced garlic, ground cumin, salt, and pepper. Add chicken breasts, coating them well. Cover and marinate in the refrigerator for at least 30 minutes.
