1 pound baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons unsalted butter

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small saucepan over low heat, melt the butter. Once melted, add the honey, minced garlic, thyme, salt, and black pepper. Stir well to combine and remove from heat.

      In a large mixing bowl, place the baby carrots and pour the honey garlic butter mixture over them. Toss until the carrots are evenly coated.

        Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.

          Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, flipping halfway through for even cooking.

            Once roasted, remove from the oven and let cool slightly. Transfer to a serving dish and sprinkle with fresh parsley for garnish.
