Honey Garlic Butter Roasted Carrots

1 pound baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons unsalted butter

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

Chopped parsley, for garnish (optional)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    In a small saucepan over medium heat, melt the butter. Once melted, add the honey and minced garlic. Stir until the mixture is well combined and fragrant, about 1-2 minutes.

      In a large bowl, combine the baby carrots with the honey garlic butter mixture. Toss the carrots well to ensure they are evenly coated.

        Sprinkle with fresh thyme, salt, and pepper, then toss again.

          Spread the coated carrots in a single layer on the prepared baking sheet, making sure they are not crowded.
