4 medium sweet potatoes

1 pound ground turkey

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 small onion, chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

1/4 cup fresh cilantro, chopped (for garnish)

Greek yogurt or sour cream (for topping)

Preheat the oven: Begin by preheating your oven to 400°F (200°C).

    Prepare sweet potatoes: Wash the sweet potatoes thoroughly. Prick each potato with a fork several times to allow steam to escape. Place them on a baking sheet and roast in the preheated oven for about 45-60 minutes, or until tender when pierced with a fork.

      Cook the turkey mixture: While the sweet potatoes are baking, heat a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent (about 3-4 minutes).

        Add ground turkey: To the skillet, add the ground turkey. Cook, breaking it apart with a spatula, until it is browned and cooked through (about 5-7 minutes).

          Add spices and veggies: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Then, add the black beans, corn, and diced tomatoes. Mix well and let it simmer for 5-10 minutes until heated through and the flavors meld together.

            Assemble the stuffed potatoes: Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Carefully slice each potato in half lengthwise and fluff the insides slightly with a fork.
