4 chicken thighs (bone-in, skin-on for extra flavor)

1 cup soy sauce

½ cup brown sugar

½ cup pineapple juice

¼ cup rice vinegar

3 cloves garlic, minced

1-inch piece of ginger, grated

2 green onions, chopped (for garnish)

1 tablespoon sesame oil

1 teaspoon black pepper

1 teaspoon red pepper flakes (optional, for spice)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the soy sauce, brown sugar, pineapple juice, rice vinegar, minced garlic, grated ginger, sesame oil, black pepper, and red pepper flakes. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours, or overnight for even better flavor.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Sear the Chicken: Heat a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade, letting the excess drip off. Sear the chicken thighs, skin side down, for about 5-7 minutes until golden brown. Flip the chicken and sear the other side for an additional 3-4 minutes.

        Bake the Chicken: Pour the remaining marinade over the chicken in the skillet. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
