Ham & Bacon Cheesy Potatoes

Ingredients
  

2 lbs baby potatoes, halved

1 cup diced ham

6 strips of bacon, cooked and crumbled

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/2 cup sour cream

1/4 cup green onions, sliced (for garnish)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the halved baby potatoes, olive oil, garlic powder, onion powder, salt, and pepper. Toss to coat the potatoes evenly.

      Arrange the seasoned potatoes in a single layer on a baking sheet and roast in the preheated oven for 25-30 minutes, or until they are fork-tender and starting to crisp.

        While the potatoes are roasting, prepare the cheese mixture. In a separate bowl, combine the softened cream cheese, sour cream, and half of the shredded cheddar cheese. Mix until smooth and creamy.

          Once the potatoes are done, remove them from the oven and reduce the temperature to 350°F (175°C).

            In a large mixing bowl, combine the roasted potatoes, diced ham, crumbled bacon, and the cheese mixture. Stir gently until everything is evenly coated.

              Transfer the mixture into a greased 9x13 inch baking dish and spread it out evenly. Sprinkle the remaining cheddar cheese on top.

                Bake in the oven at 350°F (175°C) for 20-25 minutes, or until the cheese on top is melted and bubbly.

                  Remove from the oven and allow to cool slightly. Garnish with sliced green onions before serving.
