Ground Turkey Teriyaki Stir Fry

Ingredients
  

1 lb ground turkey

2 tablespoons olive oil

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 carrot, julienned

1 cup snap peas

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium recommended)

2 tablespoons teriyaki sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 teaspoons cornstarch mixed with 2 tablespoons water (optional, for thickening)

Sesame seeds (for garnish)

Green onions, sliced (for garnish)

Cooked rice or noodles (for serving)

Instructions
 

Prepare the Sauce: In a small bowl, mix together soy sauce, teriyaki sauce, rice vinegar, and sesame oil. Set aside.

    Cook the Turkey: Heat olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula (about 5-7 minutes). Season with salt and pepper to taste.

      Add Aromatics: Once the turkey is cooked, add minced garlic and ginger to the skillet. Stir-fry for about 1 minute until fragrant.

        Add Vegetables: Toss in the sliced bell pepper, broccoli florets, carrot, and snap peas. Stir-fry for 3-5 minutes, or until vegetables are tender but still crunchy.

          Combine with Sauce: Pour the prepared sauce over the stir-fried turkey and vegetables. If using, stir in the cornstarch mixture to thicken the sauce. Mix everything well and cook for an additional 2-3 minutes until heated through.

            Serve: Remove from heat. Serve hot over cooked rice or noodles. Garnish with sesame seeds and sliced green onions.
