1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup corn (fresh, frozen, or canned)

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp chili powder (adjust to taste)

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or parsley for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally until they are tender and lightly caramelized. Remove from skillet and set aside.

    Cook the Turkey: In the same skillet, add another tablespoon of olive oil if necessary. Add the chopped onion, garlic, and red bell pepper. Sauté for about 3-4 minutes until they begin to soften.

      Combine Ingredients: Add the ground turkey to the skillet, breaking it up with a spatula. Cook until the turkey is browned and cooked through, about 5-7 minutes.

        Season the Mixture: Stir in the smoked paprika, cumin, chili powder, corn, and the previously cooked sweet potatoes. Mix well and cook for an additional 3-4 minutes, allowing the flavors to meld together. Adjust seasoning with salt and pepper to taste.
